In our best vinegar in the category of PGI certified Balsamic Vinegars of Modena . The perfect harmonization between cooked must and wine vinegar is perfectly fitted for the most demanding consumer. This Balsamic Vinegar of Modena PGI is very dense, obtained from typical red organic and biodynamic only grapes such as Lambrusco or San Giovese . The long aging in 220 litres oak casks is the reason for the overall harmony improvement. Thus, the addition of any type of preservative or colouring is unnecessary.
A delicious dressing that goes well with seasoned cheese, fruit, ice cream, sauces, rice or soups. Long aged in 220 litre oak barrels.
ABOUT THE PRODUCER
Pioneers of an alternative way of doing agriculture in Italy, they were among the first Italian farms to grow organic and biodynamic grapes and the first vinegar factory to produce organic and biodynamic Balsamic Vinegar of Modena.
Suffice it to say that Acetaia Guerzoni has been Demeter biodynamic certified since 1984.
The crown jewel of our products is the Traditional Balsamic Vinegar of Modena P.D.O. extra-old: a unique vinegar in the world because it is already organic and biodynamic despite over 25 years of aging.
The farmers are also their partners, from whom they purchase the grapes (all organic and biodynamic) that they are unable to produce entirely from their own land. With each of them have been cultivated, often for decades, relationships based on trust and transparency, on love for the land and for man, and on care for what nourishes both.
